
These 70 to 90 year old vines are planted on very steep slopes, so steep they have to harvest by hand, with volcanic soils rich in clay and silt. The grapes are destemmed and pressed, vinified for 20 days in stainless steel, and rest for 6-8 months on fine lees. The resulting wine combines the complex volcanic mineral with apple, pear and a hint of fresh cut grass.
