Pét-Nat (or Pétillant-Naturel) is a term used to describe sparkling wines made using the more primitive, hands-off approach known as Méthode Ancestrale. Unlike the Champagne Method, which requires two fermentations (one to create a still wine, another to add the bubbles), Méthode Ancestrale uses just one fermentation that finishes in the bottle. The result is usually cloudy from lack of filtration, less bubbly, with more wild, fresh flavors than their Champagne Method counterparts.
