A part of the artisinal winemaking renaissance in Emilia, the land of Lambrusco, Spuma is a bottle-fermented unfiltered Metodo ancestral pet-nat made from the geeky high-acid Sorbara grape, the lightest of the lambrusco grapes. It's delicious, a touch bitter, with notes of strawberry, watermelon, cranberries, and grapefruit bitters. Light and refreshing, a great aperitif or picnic wine.
